Munchie Monday: Infused Watermelon Popsicles

Summer calls for hydration and yummy snacks, so why not have them infused?! Enjoy the ultimate cool-off with these Infused Watermelon Popsicles and choose to infuse it with our recommended products to make delicious and relaxing treat. 



3 1/2 cups of seedless watermelon, cubed

5 1/2 Tbsp granulated sugar
1 Tbsp lemon juice
1/2 cup canned coconut milk, shaken well
About 6 medium-sized kiwis 
1 Tbsp mini chocolate chips 
Popsicle Mold


Rise Tincture of your choice
1. Add the cubed watermelon, 2 Tbsp of granulated sugar, lemon juice and either pour your Lemon Stir Stick or place the recommended amount of drops from your Rise Tincture into a blender, and blend until pureed. Carefully pour popsicle molds about 2/3 full. Sprinkle the chocolate chips and use the popsicle stick to push them down. Insert the sticks and freeze for about 3 1/2 hours.

2. During the final 30 minutes of the popsicles freezing, whisk together coconut milk with 1 tbsp of sugar until dissolved. Chill mixture for 30 minutes or until cold – not frozen.
3. Remove popsicles from freezer and pour and even layer of the coconut mixture on top of the watermelon layer, keeping room for the kiwi layer. Place back into the freezer for 45 minutes.
4. Cut the tops of the kiwi and scoop out the fruit, leaving the skin. Blend kiwi and 2 tbsp of sugar until pureed. Strain the mixture to remove the seeds and chill for 30 minutes.
5. Remove popsicles from the freezer and place the kiwi layer into the mold. Freeze until solid, remove from the molds and enjoy!
